I'm finding myself in a veggie rut and I need your help. For dinner we usually have green beans (garlicky or buttery), peas, or carrots from last year's harvest (all are previously frozen). I don't really care for corn these days since it's considered a grain. On occasion I prepare Brussels sprouts which only I love. For lunch I usually cut up carrot sticks, but J (almost 2) has a hard time getting them small enough to swallow.
So, what are you and your kids' favorite veggies?
My kids love raw broccoli (they call them broccoli trees) with some sort of dip. They also love salad and roasted veggies (red pepper, onion, carrots, mushrooms, zucchini, yellow squash was the last one I made. They don't like the red peppers, mushrooms, or onions-so more for me).

ReplyDeleteWe do asparagus, broccoli, zucchini, mushroom, radish alot more than carrot & greenbean, we also use califlour as a fauxrice or fauxtato
ReplyDeleteWe eat a lot of broccoli, asparagus, mushroom, carrot stir fry (we actually had it tonight) for dinner. It's great the next day to put on salad or to put over rice again. We also eat a lot of avocados(although it may be a fruit, I'm not sure) :)
ReplyDeleteMy kiddos like spaghetti squash.....it is fun for them and easy in the micro. I usually do butter, and sometimes a sprinkle of parm.

ReplyDeleteMy kiddos love just eating raw veggies and dip. We do carrots, green beans, baby tomatoes, orange red and green peppers, cucumbers and whatever else we have around the house. Nothing more fun than being able to dip food. Aizen has even been know to dip carrots into mashed potatoes. lol
